Recipe: Puffy Fritter Recipe (savory or sweet)

Most people love those wonderful fritters that are like little pillows of corn goodness, but in fact the same recipe can be made for any number of different treats.
INGREDIENTS:

  • 1 c. flour
  • 3/4 tsp. salt
  • 1 tsp. baking powder
  • 1/2 c. milk
  • 1 egg, beaten
  • 1 1/2 c. drained kernel corn [[ or apple, or other…]

Step 1 – Sift flour, measure and sift with salt and baking powder.
Step 2 – Combine milk and egg and beat thoroughly. Add to dry ingredients and mix just enough to moisten.
For savory corn fritters:
Step 3 – Stir corn into the mixture with a light touch.
Step 4 – Drop batter by tablespoons into deep hot fat, 365 to 375 degrees. Fry for 2 to 3 minutes or until they are a pretty, light brown.
Step 5 – Drain on absorbent paper.
For a sweet option:
Step 3 – Stir chopped apples sprinkled with cinnamon into the mixture with a light touch.
Step 4 – Drop batter by tablespoons into deep hot fat, 365 to 375 degrees. Fry for 2 to 3 minutes or until they are a pretty, light brown.
Step 5 – Drain on absorbent paper and sprinkle with powdered sugar.
